Ingredients:
- 3 whole eggs (measure and use the same weight for flour and sugar)
- 6 tablespoons cold water (consider 2 tablespoons of water per egg)
- Half a packet of baking powder
- 1 teaspoon gingerbread spice mix
- 1 teaspoon vanilla extract
Instructions:
???? Beat the whole eggs, water, and sugar until creamy.
???? Add the baking powder and spices mixed with flour, pour into a cake pan lined with silicone baking paper. Bake in a preheated oven at 160?C for approximately 40-45 minutes.
?? Ingredients for the cinnamon cream:
- 250g mascarpone
- 4 dl whipped cream
- 1 packet instant gelatin powder
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
Decoration: Honey figures or chocolate decorations
Preparation:
???? Whip the cream with gelatin until stiff. Add mascarpone, cinnamon, vanilla, and continue beating until the mixture is smooth and creamy.
???? Cut the sponge cake into three equal parts. Fill 3/4 of the cake with the cream, then cover the sides and top with the remaining cream. Divide the top of the cake into 8 equal parts and press a cream rose onto the edge of each slice. Decorate every other slice with honey figures or chocolate decorations. Feel free to use any decorations you prefer. Finally, sprinkle with a little cinnamon.
